Can I make it so you can't see anything unless you are jumping?

I'm going to say yes, because this removes a mechanic, even if it's only temporary.However, there technically isn't a new mechanic, but if you can frame this as one it's fine.

My idea:

Maze solver but whenever you solve level, new rules and bugs are aplied.

And you have a torch which light up only placed.
