Okay so it says the submissions are 5am for me. So what time zone does this follow? EST? GMT?

I believe that’s your local time. Itch.io automatically adjusts time to your time zone. For example I live in Europe and the page shows that the jam starts and ends at 6 AM. If your nervous about it, you should probably check itch.io documentation or something...
