One thing I don't like is when I've met a character a bunch of times and still they play out scenes like they don't know me.

I think this kills the immersion for me. The Mermaid always remembers, so does the allies in your party of course, and the Brothel Boss Lady. But there's only one scene that shows the Dullahan knows you already, and even after that scene, I run into her and it's her alone and she doesn't know who you are. As far as I know she's the only Dullahan.

Same thing with the Minotaur lady and the vampire sisters only acknowledge they know you already if you see the follow up scenes they have in the town at the church. It's just odd and kills interacting with the characters over and over.

I run into random monster ladies all day long, and it's no big deal because I can assume they're random. But some seem so distinct that they can't be random encounters. Yet no name is given and they still play out the same conversations. The only one I can accept this from, especially going into day 130 in-game, is the Ghost Bride. Ghosts always echo. They always fixate/obsess over playing out a desire or scenario over and over when they haunt places. So I get that. Hell, even the goblin girl, Skelie I think her name is, even she remembers you.

But I hope measures can be made so that all the unique one of a kind type characters remember you. And that first time meeting scenes don't play out over and over.
