Is there a way to set the default name, race, hair, eyes, etc. in the preference files so that you can speed past the final page of character creation? If not, is that a feature you've considered adding to the Options menu?

You could probably pull it off if you're tech-savvy enough, but as far as I'm aware you can only unlock achievements in the preference.json file.
