Hey, I just stumbled across this question almost half a year later…
Settings > Advanced > Advanced Engine Menu > HUD Options > Weapon bob speed.
Note that the katana in particular still has some bob seemingly due to sprite-based animation that is always active (which is noticeably lower-framerate), but all other weapon bob should be gone if you set this to 0. This works both in the demo and the early access version.
