I do have someone on my mind to declare love to, But If I had the chance I would love to do it to all villagers! Is there any way to have different save files or something?

Declaring love to a villager will trigger a cut scene and then the end credits. The next time you go to your game you'll have the memory unlocked but the game will return to where it was before the declaration. You can do everyone on one file.
