Once you have unlocked an ending, you can disable that ending from appearing by clicking the 'O' with a '/' through it in the Gallery for that ending. That way you don't accidentally do the same one over and over again.
With persistence, you can get as many perks as are available onto one monster. It just is a much rarer outcome.
