You can gain knowledge of crafting ammo from the gun store owner and learn to set traps from the hardware store owner. These options are available in the early days. If you missed them, you can go back using cheat 'Take Me To Floor 3'. This will set any loaded save to day 3.

The update shouldn't erase your animation unlock progress. Are you on Android? If so, uninstalling the app can erase all progress. Just install the newest APK file without uninstalling the old one.
