Encumbrance would be handled by a slot system: You have 6 + Body + Physical item slots. Most items take up one slot. Items like rations and torches would take 1 slot per bundle of 5. Smaller items could also be grouped together to take up one slot per bundle of 5. A backpack does not take a slot because it essentially provides the slots in the first place.
Use of equipment is straight forward: Equipment allows you to do things you otherwise couldn't do and avoid Disadvantage or if it is superior grant Advantage. Superior weapons might inflict more than one hit.
