Adding bosses could be cool or power-ups, like a power-up that gives your bullets a shotgun pattern for a couple of seconds.

I totally agree with the idea of easing the player into the difficulty. When I first started making my game, level 1 was never supposed to be as hard as it was, since the original idea for the gameplay loop was to get to the end as fast as you could while doing tricks on your pogo stick for extra points. Unfortunately, I couldn't figure out how to code the trick system in the game, so I made the game a rage game instead.
