To play itch games on Steam Deck, I use a program in the discover store called "Lutris" which lets you setup wine packages to run them from, then you can either run in Lutris in desktop mode, or tell Lutris to add a Steam shortcut so you can play them in Game mode!

Same issue, hopefully a touch button or gesture gets added to allow us to do that.

It worked for me.
