Well, as far as I know, no character can equip every weapon/armor. Because for some, they're too heavy or they fight with different weapons. As far as stuff like what weapons when they have multiple types to choose from, it's probably for the best to give them the one that gives the stats for them or best effect. Atleast for now, cause later you can find or craft legendary stuff.

I went in, did the fights, went out and when I go out of the gallery the receptionist isn't there, so I can't go in.

I can't use 3 of my team members; mc, Tamamo and Murdock. I send them on a hard assignment, wanted to send the police girl too, but the assignment didn't disappeared and I send a new team. Now they're gone forever. It looks just like it would usually in the character menu if you send them away. Greyed out and you can't interact with them. I'm on both the first snow mountain quest and the golem one. Almost beat the second one while being level 20.

toss the turtle has both start boosts and options along the way such as... shooting the turtle with a gun.

Cow Girl is literally her name in Goblin Slayer. Not a single character, that I know of, has a normal name, because it's based on DnD or smth.
