I played a game called Witch It on Alpha (when the name was Witch Hunt), Beta and I'm still playing it. On Alpha and Beta we didn't have Official Servers, so the players used to host the matches, but somehow it was very simple and didn't require any IP address or Port configuration, we just had to click on "Create a Match", choose the maximum of players allowed to connect (max was 16), map, etc, and then there was a list with all the "servers" you could connect to. So if you wanted to join a match, you just had to search the Servers List, click on a server and connect. Simple and Easy. Today players still can host their own games, but generally the Official Servers (US, EU and very recently AU) have more players and lower ping. So I suggest that in future builds you can make creating matches more easily for more players and having a list of hosts.
