When a crop reaches level 15, there's a gene option that grants one mystery and each gene upgrade after that grants one more.
Select the sawmill and under where it displays the building's level activate the square button that says "cut plates" when you hover over it. It doesn't need to be placed adjacent to a forest or a mountain.
