First of all, these feedbacks are extremely valuable and provide us with topics to discuss at team meetings. Secondly, balancing the difficulty is achievable correctly when we have at least all the levels in hand, which we haven't completed yet. The difficulty of the demo is tuned down to allow everyone, even at fairs, to try it out. In the full game, the difficulty will probably be higher.
