any potential for a non-vr version? even if its just as simple as a static camera and buttons just like the original, it'd be cool

That is in the works.

I want this to be a VR game first, with a flat 3D mode after the VR part is fully fleshed out.

You can download a WebXR emulator extension to play in flat mode. it is a little tricky to get working though.

In the meantime, I recommend you try out the original :)
