I have also just moved my project over from Unity to Godot. Since I hadn't had the foresight you had and also aren't that far with this current project, I decided to give Gdscript a go and rewrote all my scripts. I found it super easy to switch and since it doesn't require compiling every time you want to test, development is going quicker than ever for me. I also found it way more performant, but that's almost certainly just the engine, not the language.
