Yes there is a way. Go for the Evolution and if it isn't the one you want then leave the game without leaving the evolution screen.The game will not save and you can try again because it isn't just random for the eeveelutions.
that literally is random. the only way to get the one you want is to reload the save every time until you get the one you want.:/
