Technically the only reason we can't make coffee out of those beans is because they're not powdered, one could argue that the herbalist could take the time to roast and grind them manually but I for one tink it would be too much of a hassle to do so. Also alcoholic beverages like wine need time to ferment or something not really an expert. But it would be fun if the health potion had a pretty low alcoholic percentage like cider.
