Just found out that you can, in fact, kill Chunks (the buff mouse thingy that shows up if you take too long) but it takes a little while cause of his massive HP. He does leave a pretty decent cash drop behind though. If you do kill him, he'll only show up again the next floor.
Just take an empty room, let him show up, and then run around while shooting him.
