If you wanted to, you could just run the game in WINE, or at least attempt to. If that doesn't work, there's always going through Lutris, adding the game in there, and then enabling DXVK which basically forces it to utilize vulkan. As far as I know that shouldn't be necessary though, since I've played Deltarune under Linux before and haven't had to do anything special to make it work, it just ran.
