I'm new to Godot too. From what I saw, HeartBeastGame EndeavorGonkee, and GDQuest are good YouTube Channels that teach Godot 2D. But if you're looking for 3D tutorials, I don't have any suggestions.

When you need specific tutorials (like varying jump heights), just search them on YouTube. It's likely that someone already made a video about it, albeit low quality at times.

You can also visit Godot's Q&A Forum when you have specific questions like changing the default background color through code. Godot's documentation within the engine can also help sometimes, although I haven't tried reading it, so I'm not sure about that (but it's probably helpful in some way).
