Unsure why this happens, but when I start the game through the Itch.io app on Linux it crashes. But when I go to the install folder and boot the .sh from there it works flawlessly.
It seems it couldn't launch the runtime selection prompt.
To fix this I reinstalled the game through Itch, and now it works fine when starting from the app. So reinstall if this is an issue for you!
