I was wondering if the save files from the previous version of this game can be transferred to the new version of the game?

So never even considered using an older save but you are welcome to give it a shot, i did not build in any protection so at worst you can just re-download my version but you can try this:%APPDATA%\Godot\app_userdata\RogueWeight\saveV0-1-0.dat
%APPDATA%\Godot\app_userdata\RogueWeightN2Mod\saveRWMOD-v1.dat
Just rename the save to match the modded saves name and that is it!
The mod is fully additive so it may actually work.
Please post your results so others can see if its possible :D
