Do you recommend figuring out what your cryptid looks like right from the beginning, or will this develop in play?

Yes to both! ;) If you have a strong initial idea or a personal favorite cryptid then by all means, feel free to start playing with a clear picture of what you're searching for. If you're not sure or have a few different ideas, that's great too -- it gives you some mystery and intrigue to add to your entries as you complete the journal.
Whether or not you've got that clear image to begin with, your conversations with the locals and exploration of the area can also shift those details and reveal new ones.
The journal story path will provide you with opportunities to be surprised by what you find, so truly feel free to define as much or as little as you wish along the way. You'll have chances to define or refine those details as you go.
