For anyone who is gluten-free and wants to try this, all-purpose gluten-free flour CAN be used instead of normal flour as a direct substitution! It's not perfect, the pancakes will turn out a lot thinner and a little bit chewy -- or at least they did when my friend and I tried it (we were both inexperienced at pancake-making though) -- but they're still pretty decent!
