Thanks for playing my game. The "three jumps" that you mention are tied to the number of scales you have (the three purple/pink vertical columns of scales on the fish). You can spend more scales for more jumps, but spending too many will leave you vulnerable to dying to the hot frying pans (the kill you if you have no scales). You can get more scales by breaking plates, and all platforms give you one free jump when you land on them.
