How many chapters are anticipated for this game? Also, does this mean there won't be any additional chapters to Roommates 1?

IIRC, for the first season, there will be 6 chapters, after that it will be continued in season 2 (which I'm guessing it will be from chapter 7 onwards)
As for your second question, AR1 is already completed/finished. At most, Hanako can add more dlc's like the "Actual Roommates Gaiden: The Woman Who Lost Her Cat"
