I unlocked the Chef, but I don't see her in the Amenities menu, and I can't find any place to make sure she stays hired. Where should I be looking?

Let's see what stage you're currently at... what did Emily and Kathryn say when they checked out (certain conditions have to be fulfilled in order for them to be hired)? If they said, "You can now hire us...", talk to Wodehouse as usual after checking everyone out and you can then hire Emily and Kathryn during Set-up by going to Rooms > Amenities.
If you don't see that in the Amenities screen during Set-up, could you attach screenshots of the Tasks screen and the Amenities screen? Thanks!
Missing the tabs was a problem one of my early playtesters had too, so I added an explanation about the different tabs If you don't have any amenities chosen when you first check in guests. But I'll try to make this clearer, and mention in the bookcase too - thanks for the suggestion!
By the way, you mentioned the Amenities menu in your first post... I was just curious as to which menu you were referring to, if it wasn't the "Amenities" tab in the "Rooms" menu? (This will help me better understand the player's perspective.)
