how do you edit npcs?
Options:
Allow NPC Customization (should be checked by default)
Enable Cheat
Click over the NPC description -> Edit Inclinations/Customize
(Better wait the end of their storyline in case of Special NPCs)
Otherwise you can do that in save file, whenever you got a bit of practice..

When you edit something in the save files is very likely to break it tho
I said need a bit of practice to do that.. until you respect format and words is enough safe modify some aspects, like nightlife or similar.. Those are fixed for the whole run, sadly..
