Two questions:

1. Do generic headings like intro, rules, adventure tables, etc count towards the word count?

2. If I add extras that are 100% unnecessary for playing, like an example play-through, does that count towards the word count?

1. Headings do count towards the word count.

2. If the extra content is clearly separate from the core rules, then it's fine.
