Some story scenes have ways to replay all or most of the scene after. For the ones that don't, best option you can do today is to create a spare save right before them and use that save to see the scene. If you leave an occasional spare save as you progress through the game then you can go back to before a scene, progress to immediately before it, and then drop a save for that scene specifically.
Consider starting a new character with a different build if you haven't been dropping saves and have missed a large number of such scenes and want to collect them now.
