"Starts going left..." - Now this bothers me as well. I'll dig through the code and see if I can correct it; already forgot what's in there :)
I know there are a lot of ways to play Pac-Man, but none of those are the original arcade Pac-Man: they are all copies. Maybe they are near perfect copies, but there is no way for me to know that, i.e. there might have been differences in the gameplay itself from the original version. I didn't want to copy those differences, so the only way for me to "feel" gameplay was to watch it played on the arcade like Arcade Game: Pac-Man (1980 Namco (Midway License for US release)).
Even if I had the opportunity to play, I don't think I would have been able to copy the mechanics without someone explicitly telling me about them. Thankfully, there are a lot of resources that describe the mechanics. The most noteworthy is The Pac-Man Dossier. I took notes and added them in README on my GitHub, which is like a water-downed version, but it's probably more digestible. You can also find other resources I used in the README.
But... my version is definitely not perfect. For example, I omitted the 256 Glitch and I am sure that there are other things that can be found, just like you did for the Pac-Man's starting direction ;)
Lastly, thank you for your kind words of praise pinback, they are a perfect condiment to the work that went into making this game. 🙏
