So I currently have a task for the principal saying "check the teachers lounge after 60 days but nothing seems to be happening there so I guess I just have to keep progressing other characters?
That's correct, progress other tasks listed below day 60 and that event will trigger. Try to keep up with tasks around the day you're on and you'll never run into issues.
