1) Keeping track of the enslavement tasks is in the same tab as likes/dislikes
2) try using the debug menu to force level them up.
3) Yeah that's your issue, I do crash a lot but it's usually at the start of days.

Main menu options and debug will be under debug just click on it.
Debug if you have it activated/available will be in the bottom left next to menu.
