My advice to you is to use your soul orbs and equip them to your weapons. Buy the best sword, staff, and bow, and manage when to use your potions when fighting her.
Lightning arrow turn 1 to stun her then pile on the damage
This is exactly how I handle every single fight, since Stuns don't seem to decay at all.
