You are missing something, the text says; "However, I'm afraid only a PIG is capable of picking up on their scent..."
There is a pig mask that is for sale in the Sigma Grunt outpost, if you equip that mask you'll be able to find the truffles through pink odor particles, if you don't have the pig mask you won't be able to find them.
