Awesome job completing a game and submitting on time! Some simple sound effects and background music really could've gone a long way toward improving the experience. I def recommend experimenting with that for future games/jams. Godot makes it super easy via AudioStreamPlayer2D node for 2D games. My favorite thing about this was actually moving just right to get the blue cop looking dudes to get crazy legs due to sprite flipping lol.

Running around as a poisonous mushroom is a neat idea! Would love to see the enemies be a little more responsive, can be hard to know when they are hit or not :D
I like the idea of playing as a poisonous mushroom. The game is simple, but works. I personally think it could do with some more polish though - sounds, a way to track your progress like a scoring system or a number of enemies to kill, and a menu to tie it all together. I also think there needs to be some way of knowing how far an NPC can look to help with moving and attacking.
