A nice piece which aesthetically reminds me of some similar styles that I myself like. I like how you kept gameplay and other game factors in mind during the process for this piece. As an artist in the industry you will always need to consider these when creating art.
Like you said, your lighter scenes are much nicer and easier to read, and I'm sure like you wish to pursue, furthering your learning in lighting will help scenes like this look even better.
The art style of this is not as cartoony as Overcooked or Slime Rancher. To create work that is more stylised or cartoony you could look into creating hand-painted textures. These can be produced using Photoshop or Substance Painter. Often these will not rely on lighting a lot so can be diffuse/colour map only with little to no specular and gloss maps used. You can also look at using a toon shader or an unlit shader to work with the maps. Although it can also just be created with a simple colour map only setup in engine.
Keep in mind that both Overcooked and Slime Rancher were made using Unity. A lot of stylised and cartoony games use Unity whilst realism and AAA often opt for Unreal. If creating stylised art is something you are really interested in for the future I'd recommend learning Unity.
