you have to try to get her do a spell with a potion then taunt her then keep guarding and read the speech too trust me on it and eventually she will do another spell but you pleasure herand mess her up and make her lose balance into the tentacles

Okay, figured out you must not be wearing the hat to defeat her. That is actually major, and they give you no clues the hat is messing you up either.
