Hey!

I was wondering if it could be like "Complete the level in 1 minute" and then if you fail by dying or running out of time you could restart, or is it like the hole thing has to be one thing from the menu to the game and stuff.

no I guess the main game should be 1 minute long not the menu or a intro scene

if thats what you want to do the jam wont shame you, feel free its however you interpret it.
