This is very nice, Nick. It has potential to be a fully fledged song with the keyboard being the leader of the pack!
As Selkione mentioned, including other instruments to set the keyboard up for opportunities to divert the song to other sections would add good chemistry between your chosen instruments.

I really like the appoggiaturas and the end triplet.
I guess what we hear is not a DAW but you playing and it's great!
As the challenge was 3 instruments, it could have been interesting if you kept what you did in the exposition of the theme and if you did it a second time with a 3 instruments arrangement.
Thank you! Glad you like my little variations too (appoggiaturas and triplets) - they can transform an oh-so-simple theme like this into a bit more special song.
And oh, you're right! I interpreted the challenge as "at most 3 instruments", so I figured I was doing an even better job by only using one xD
Maybe I'll extend it using 3 instruments someday~
