These are games where the player can choose their character's own gender expression. Some games let you set your body shape, the words for you, or more, or only one of those things. Maybe your options are only he or she, or maybe you can also be they, it, or ze.
Please explore this particular collection with caution. I haven't tried or reviewed most of these games yet, so it's too soon for me to give content warnings, and some of these games may not be what I thought.
