For various reasons, this took a very long time. Most of those reasons weren't related to the game itself, but to my life outside of gamedev. But at long last, I have completed porting the game to Godot, and have posted new builds. They're not quite a 1 for 1 match with the final Unity version from 3 years ago, but they work, which is something at least.
My plan is to continue working on this with a much more frequent update schedule moving forward. My gamedev streams happen almost every weekend, and I may start streaming during the week as well if time permits.
