Instead of writing adventures or settings, I like to write generators for adventures or settings. It’s weird, I know. But you can just open these HTML files with your browsers, generate new setups until you like it, and save it as HTML (or PDF). If you save a generated page as web page or as text, you can import it into a program for editing and you’ll have a document that evolves as you play and add to it.
Alternatively, if you want to make changes to the generators themselves, you can edit the HTML files themselves. The generators all come with explanations on how the tables work, and you can start making small changes to see how it goes.
