SCPlayerController New URP & Code Update

URP Version! Early access prototype controller..

First person controller with semi-basic movement including momentum, double jumping, and crouch sliding

• Added project to URP version of Unity
• Fixed Materials
• Cleaned up and removed the broken climbing functionality (for now)
• Removed the dashing
• Removed the stamina
• Cleaned up Scriptable Object PlayerSettings 

Basically removed broken functionality and residual variables and functions from cut or removed code. [ next up is refactor, scene and model upgrades, and finally tutorial and new project push on itch.io / github ]
