The free to use "SuperCharacterController" asset comes with tick down survival stats. What I've done here is link them together with assets in the game so you can replenish food, water, and health through collectables. If your food or water levels get to zero then your start losing health and if your health gets to zero then it transitions to the game over scene.
I've created a scriptable object to hold values for food, water, and health. I can create a number of these to represent both positive and negative food/water/health items in the world - for example edible mushrooms and poisonous mushrooms...
