Purchases on itch work the same way as on patron. Having bought the version once, you will not be able to access new ones every new release. You will have to buy them again or wait for a free release.

The gallery is finished regardless of the version. Everything that is there can be obtained in-game.

Offer to date her and, when she puts forward an ultimatum, refuse it. Right after that, go to Ayano's house and there will be this scene.

Codes that were created by itch can be revisited by e-mail request afaik. If that link at itch doesn't work anymore I don't know...
