I've loved the game throughout its builds and was wondering if there was a planned release date for steam and also if the builds would be the same as the public builds on itch.io or all together once the game was completely finished.

No planned release date yet! We won't announce one until we are sure we can deliver by the release date. The demo will remain in some way shape or form.
