Itch.io keeps the older downloads available if the developer wants them to stay. Therefore, you should be able to get the older versions back if you decide to delete them. I will assume that the developer does not want to add a classic mode because of this. It would just be a waste of time for what it's worth.

You don't have to pay for it anyways... You can click the button that says "No thanks, take me to the download" and you get it for free. (even if you did pay for it, you wouldn't have to pay for it again in newer updates)
